Lime and Vanilla Cheesecake

On our trip to Rodrigues we were lucky enough to chance upon the local limes which are so fragrant and juicy.

I decided to keep a couple to use in Mrs NMRS’s favourite dessert – cheesecake. You can use any lime of choice but go for a smaller variety. I used shop bought biscuits due to time restraints but you could make your own but make sure they are cold before crushing.

Lime and Vanilla Cheesecake

Ingredients:

250g gluten free shortcake biscuits

100g dairy-free margarine

800g lactose-free cream cheese

75g light muscovado sugar

75g golden caster sugar

2 eggs

30g cornflour

1 vanilla pod

2 limes grated peel

20g lime juice

Preheat the oven to 180C. Crush the biscuits and melt the margarine and mix to combine. Press down into the base of a loose-bottomed tin and pop into the fridge.

In a large mixing bowl, add the cream cheese and mix with the sugars. Add the grated peel, juice, vanilla seeds, eggs and cornflour and mix to combine.

Take the tin from the fridge and pour the mixture in, then pop into the oven for 50 minutes. Increase the oven to 200C and bake for a further 5 minutes. Turn off the oven and leave the cheesecake in the oven for 30 minutes. Take out and leave to cool in the fridge for about 3 hours before enjoying.
